Heat olive oil in a sauté pan over medium heat. Add minced garlic and diced onion and cook for 1 to 2 minutes until fragrant and translucent.

Add roughly chopped spinach to the pan and sauté for another 1 to 2 minutes until wilted.

Stir in black beans and corn; cook and stir frequently for 5 to 6 minutes to heat through and combine flavors.

Reduce heat to medium-low and sprinkle paprika, cumin, kosher salt, and black pepper over the mixture. Stir well, then add shredded cheese on top and stir until cheese has melted and incorporated.

Place flour tortillas on a plate, cover each with a damp paper towel, and microwave for 20 seconds to soften and steam.

Place one warmed tortilla on a flat surface. Spoon two to three large scoops of the filling into the center. Fold in the sides of the tortilla over the filling towards the center, then fold the bottom up over the filling and tuck it under. Roll tightly to complete the burrito.

Serve the burritos warm with hot sauce, lime juice, salsa verde, or your preferred condiments.
