A quick, flavorful blend of black beans, spinach, and cheese wrapped in warm tortillas.

# Ingredients List:

→ Vegetables and Legumes

01 - 1 cup diced onion
02 - 2 cloves garlic, minced
03 - 1.5 cups black beans, drained (from can or cooked)
04 - 1.5 cups corn, drained (from can or fresh/frozen)
05 - 1.5 cups packed fresh spinach (approximately 2 to 3 ounces), roughly chopped

→ Dairy

06 - 1.25 to 1.5 cups finely shredded cheese (cheddar, pepper jack, monterey jack, or a blend)

→ Pantry Items

07 - 1 tablespoon olive oil
08 - 1 teaspoon paprika
09 - 1 teaspoon ground cumin
10 - ½ teaspoon kosher salt
11 - ⅛ teaspoon ground black pepper

→ Breads

12 - 2 large flour tortillas

# How to Make It:

01 - Heat olive oil in a sauté pan over medium heat. Add minced garlic and diced onion and cook for 1 to 2 minutes until fragrant and translucent.
02 - Add roughly chopped spinach to the pan and sauté for another 1 to 2 minutes until wilted.
03 - Stir in black beans and corn; cook and stir frequently for 5 to 6 minutes to heat through and combine flavors.
04 - Reduce heat to medium-low and sprinkle paprika, cumin, kosher salt, and black pepper over the mixture. Stir well, then add shredded cheese on top and stir until cheese has melted and incorporated.
05 - Place flour tortillas on a plate, cover each with a damp paper towel, and microwave for 20 seconds to soften and steam.
06 - Place one warmed tortilla on a flat surface. Spoon two to three large scoops of the filling into the center. Fold in the sides of the tortilla over the filling towards the center, then fold the bottom up over the filling and tuck it under. Roll tightly to complete the burrito.
07 - Serve the burritos warm with hot sauce, lime juice, salsa verde, or your preferred condiments.

# Extra Information:

01 - For meal prepping, prepare filling without cheese, let cool, then add cheese before assembling. Wrap tightly in plastic wrap and foil; freeze up to 2-3 months.
02 - Reheat frozen burritos by microwaving 6-7 minutes per side or baking at 400°F (204°C) for 45 minutes. Optionally finish in a skillet for a crispy shell.
03 - Use frozen or fresh corn directly in the pan. Substitute yellow or red onion as desired.
04 - For frozen spinach, thaw completely, squeeze out excess moisture, and use about half of a 10-ounce package.
05 - To make gluten-free, use gluten-free tortillas in place of flour tortillas.
06 - Add cooked leftover proteins such as chicken, pork, or beef when incorporating beans and corn for variation.
