Preheat oven to 400°F. Wash and halve or quarter baby potatoes according to size. In a large baking dish, combine potatoes, cherry tomatoes, minced garlic, olive oil, dried oregano, black pepper, and a pinch of salt. Toss to evenly coat.

Place the block of feta cheese in the center of the baking dish among the vegetables. Drizzle a small amount of olive oil over the feta to promote softening during baking.

Bake for 35 to 40 minutes, stirring the potatoes halfway through to ensure even roasting. The potatoes are ready when golden and tender, the tomatoes have burst, and the feta is softened and lightly browned.

Remove from oven and stir the softened feta into the vegetables until it forms a creamy sauce that coats everything. Garnish with fresh basil or parsley if desired. Serve warm or at room temperature.
