Cauliflower Shawarma Bowls (Print-Friendly Recipe)

# Ingredients List:

01 - 1 tablespoon curry powder
02 - 2 teaspoons paprika
03 - 1 teaspoon ground cumin
04 - 1 teaspoon kosher salt

06 - 3 tablespoons extra-virgin olive oil
07 - 1 large head cauliflower, chopped into florets
08 - 1 (15-ounce) can chickpeas, rinsed, drained, and patted dry

→ Base

09 - 2 cups cooked white basmati rice

10 - Thinly sliced English or Persian cucumber
11 - Halved cherry tomatoes

→ Green Tahini Sauce

12 - ½ cup fresh cilantro leaves
13 - ½ cup fresh parsley leaves
14 - ¼ cup tahini (sesame seed paste)
15 - 2 tablespoons fresh lemon juice
16 - ½ teaspoon minced fresh garlic
17 - ¼ teaspoon ground cumin
18 - ¼ teaspoon kosher salt
19 - ¼ teaspoon black pepper
20 - ⅓ cup warm water (for blending)

# How to Make It:

01 - Preheat oven to 425°F (220°C).
02 - In a bowl, combine curry powder, paprika, cumin, kosher salt, and black pepper evenly.
03 - Spread cauliflower and chickpeas separately on two rimmed baking sheets. Toss cauliflower with 2 tablespoons olive oil and chickpeas with 1 tablespoon olive oil. Sprinkle 1 tablespoon of spice mix over chickpeas and toss to coat, then sprinkle remaining spice mix over cauliflower and toss thoroughly.
04 - Place both baking sheets in the oven. Roast for 30 minutes total, shaking the chickpea pan and stirring the cauliflower after 15 minutes. Remove chickpeas when done and continue roasting cauliflower for an additional 5 to 10 minutes until lightly charred at the tips.
05 - Combine cilantro, parsley, tahini, lemon juice, garlic, ground cumin, kosher salt, and black pepper in a blender. With the motor running, gradually add the warm water and blend until the sauce is smooth and well combined.
06 - Distribute ½ cup cooked basmati rice into four bowls. Top each with equal portions of roasted cauliflower and chickpeas. Add optional cucumber slices and cherry tomatoes if desired. Drizzle with Green Tahini Sauce before serving.

# Extra Information:

01 - All components can be prepared ahead and stored in an airtight container refrigerated up to three days. Reheat before serving and add Green Tahini Sauce and garnishes afterward.
