Homestyle Apple Cobbler (Printable Version)

# Ingredients:

→ Apple Filling

01 - 2 Tablespoons (28g) unsalted butter
02 - 8 cups (about 1kg) peeled and sliced apples (1/4-inch slices; about 7 apples)
03 - 3 Tablespoons (37g) packed light or dark brown sugar
04 - 1 Tablespoon fresh squeezed lemon juice
05 - 1 Tablespoon all-purpose flour
06 - 1 and 1/2 teaspoons ground cinnamon
07 - 1/4 teaspoon ground allspice
08 - 1/4 teaspoon ground nutmeg

→ Topping

09 - 6 Tablespoons (85g) unsalted butter, melted
10 - 1 cup (200g) granulated sugar
11 - 1 cup (240ml) buttermilk
12 - 2 teaspoons pure vanilla extract
13 - 1 and 3/4 cups (219g) all-purpose flour
14 - 2 teaspoons baking powder
15 - 1/2 teaspoon salt

→ Garnish

16 - 1 Tablespoon granulated sugar mixed with 1/2 teaspoon cinnamon, for sprinkling

# Steps:

01 - Preheat oven to 350°F (177°C). Lightly grease a 9×13-inch baking pan or any 3–4-quart baking dish.
02 - Melt 2 Tablespoons of butter in a medium saucepan over medium heat. Add the apple slices, brown sugar, lemon juice, flour, and spices. Cook, stirring, for 5 minutes, or until the apples are coated and begin to soften. Transfer apple filling to the prepared baking pan.
03 - Whisk the melted butter and sugar together in a medium bowl. Add the buttermilk, vanilla, flour, baking powder, and salt, and whisk until combined and mostly smooth. Some small lumps are acceptable.
04 - Pour and spread the batter over the apples. Sprinkle cinnamon-sugar mixture evenly over the top. Use a butter knife to gently swirl the topping (the apples may interfere slightly, which is fine).
05 - Bake on the center rack for 48-55 minutes or until the topping is golden and the apple filling is bubbling around the edges. If the top browns too quickly, loosely cover with aluminum foil halfway through baking.
06 - Remove from the oven, place on a cooling rack, and allow to cool for at least 5 minutes before serving. Serve warm, room temperature, or cold; on its own or topped with vanilla ice cream and/or salted caramel sauce.

# Notes:

01 - Use a mix of tart (like Granny Smith) and sweet (like Honeycrisp) apples for best flavor.
02 - You can use either low-fat or whole buttermilk. If unavailable, substitute with whole milk.
03 - Cover leftovers tightly and store in the refrigerator for up to 5 days. Reheat in the microwave or bake, covered, in a 300°F (149°C) oven for 20 minutes.
04 - For a half-sized recipe, use an 8-inch square pan or 9-inch round cake pan and bake for about 40 minutes.
05 - Pears can be substituted for apples, using the same quantity. Reduce pre-cooking time to 3 minutes if pears are particularly soft.
