# How to Make It:

01 - Heat 1 tablespoon avocado or olive oil in a medium saucepan over medium heat. Add sliced onion and sauté for 3 minutes. Add halved cherry tomatoes and cook, stirring frequently, for approximately 5 minutes until softened.
02 - Add minced garlic, chopped sun-dried tomatoes, and tomato paste to the pan. Cook while stirring constantly for 1 minute until fragrant and tomato paste darkens.
03 - In a small bowl, whisk arrowroot starch with a small amount of vegetable broth to form a slurry. Combine this slurry with the remaining vegetable broth.
04 - Pour the broth mixture into the saucepan, add drained cannellini beans, and simmer on low heat for 5 minutes until slightly thickened and heated through.
05 - Stir in vegan cream cheese until fully melted and incorporated. Add baby greens and cook for about 1 minute until wilted. Mix in lemon juice and season with salt and pepper to taste.
