01 - 16 ounces Italian sausage, casings removed

→ Vegetables

02 - 1/2 medium onion, chopped
03 - 4 cloves garlic, minced
04 - 2 medium carrots, sliced or chopped
05 - 2 celery stalks, finely chopped
06 - 2 cups packed fresh baby spinach

→ Canned Goods

07 - 1 (28 ounce) can crushed tomatoes
08 - 1 (14 ounce) can diced tomatoes with juices

→ Liquids

09 - 4 cups chicken broth
10 - 3/4 cup heavy cream (optional)

→ Pasta

11 - 2 (9 ounce) packages refrigerated cheese tortellini

→ Seasonings

12 - Salt and black pepper, to taste

# How to Make It:

01 - Heat a skillet over medium heat. Add Italian sausage and chopped onions. Cook, breaking up the sausage with a spoon, for 7 to 8 minutes until browned. Drain excess fat if necessary.
02 - Stir in minced garlic and sauté for 30 seconds. Transfer sausage mixture to the slow cooker.
03 - Add sliced carrots, chopped celery, crushed tomatoes, diced tomatoes with juice, and chicken broth to the slow cooker. Stir to combine.
04 - Cook on low for 7 to 8 hours or on high for 4 to 5 hours. For shorter cooking times, chop carrots finely to ensure tenderness.
05 - About 30 minutes before serving, stir in cheese tortellini, heavy cream (if using), and fresh spinach. Increase heat to high and cook until tortellini is tender, stirring occasionally.
06 - Season with salt and pepper to taste before serving.

# Extra Information:

01 - For best flavor and texture, consume soup fresh. Leftovers tend to absorb broth; reheat with additional chicken broth or add tortellini upon reheating if necessary.
02 - Use spicy Italian sausage for a bolder taste.
