# Ingredients List:

→ Main

01 - 1 pound ground beef
02 - 0.5 medium onion, diced
03 - 1 tablespoon minced garlic
04 - 1.5 cups shredded sharp cheddar cheese
05 - 1.5 cups shredded mozzarella cheese
06 - Tortilla chips, enough to cover serving plate

→ Garnish

07 - Pickled jalapeno slices
08 - Fresh cilantro, chopped

→ Seasonings

09 - 1.5 tablespoons ground cumin
10 - 1 tablespoon dried oregano
11 - 0.5 tablespoon paprika
12 - 0.5 tablespoon chili powder
13 - 1 tablespoon onion powder
14 - 1 tablespoon garlic powder
15 - 2 tablespoons light soy sauce
16 - 1 teaspoon granulated sugar

# How to Make It:

01 - Shred both cheddar and mozzarella cheeses and set aside.
02 - In a large skillet over medium heat, add a drizzle of oil and sauté diced onion for 30 seconds. Add minced garlic and cook for 1 more minute.
03 - Add ground beef to the pan. Break up any clumps and cook until halfway browned.
04 - Add cumin, oregano, paprika, chili powder, onion powder, and garlic powder. Stir well to combine. Continue cooking until beef is fully cooked.
05 - Stir in light soy sauce and granulated sugar. Mix to blend flavors.
06 - If desired, tilt the pan and remove excess grease by transferring to a bowl or blotting with a paper towel. Return pan to heat.
07 - Reduce heat to medium-low. Evenly distribute shredded cheeses over the beef. Cover with a lid and let melt for several minutes. When cheese is melted and gooey, remove lid and turn off heat.
08 - Arrange tortilla chips on a serving platter. Carefully transfer the cheesy beef mixture over the chips.
09 - Top with pickled jalapeno slices and chopped cilantro. Serve immediately.

# Extra Information:

01 - For best texture, shred your own cheese rather than using pre-shredded varieties, as additives in packaged cheese can affect melt quality.
02 - The garnish and toppings can be customized with diced tomatoes, shredded lettuce, avocado, guacamole, olives, or sour cream.
03 - Light soy sauce offers a richer umami flavor but may be substituted with salt to taste.
