Rinse rice under cold water until water runs clear. Combine with 2 cups of water and a pinch of salt in a saucepan. Bring to a boil, reduce heat, cover, and simmer on low until rice is tender. Fluff with a fork.

Heat a large skillet over medium heat. Add ground beef and cook, breaking it up with a spoon, until browned throughout.

Stir diced onion and minced garlic into beef. Cook until onion softens and becomes translucent. Drain excess fat if necessary.

Sprinkle taco seasoning over the beef mixture. Add 1/4 cup water, stir to combine, and simmer for 2–3 minutes until thickened.

Warm black beans and corn in a small saucepan over low heat. Optionally, add a squeeze of lime juice and a pinch of cumin. Stir occasionally until heated through.

While other components cook, chop lettuce, dice tomatoes, slice avocado, shred cheese, and cut lime into wedges.

Layer cooked rice in the base of each bowl. Top with seasoned beef, black beans, and corn. Add lettuce, tomatoes, and avocado. Sprinkle with shredded cheese, finish with a dollop of sour cream, and garnish with cilantro. Serve with lime wedges.
