Freezer-Friendly Breakfast Burritos (Printable Version)

Savory make-ahead burritos loaded with eggs, tater tots, sausage and cheese - perfect for busy mornings or on-the-go meals.

# Ingredients:

01 - 2 1/2 cups tater tot crowns
02 - 1 tablespoon extra-virgin olive oil
03 - 1 pound Italian sausage (or breakfast sausage)
04 - 8 eggs, scrambled (seasoned with salt and butter)
05 - 1 1/2 cups shredded cheddar cheese
06 - 2 scallions, diced
07 - 8 large (10-inch) flour tortillas

# Steps:

01 - Preheat oven to 400°F (200°C). Lightly coat a baking sheet with nonstick cooking spray. Cook tater tots according to package directions.
02 - Warm olive oil in a large nonstick skillet over medium-high heat. Add the sausage and cook, breaking it up into small crumbles with a wooden spoon, until cooked through and no pink remains. Drain excess fat and transfer to a bowl. Wipe out the skillet.
03 - Prepare scrambled eggs, ensuring they're seasoned with salt and butter for the best flavor.
04 - Evenly divide and distribute the ingredients into 8 portions down the center of each tortilla: approximately a scant 1/3 cup of the cooked sausage. Top with 5-6 tater tot crowns, 1/3 cup of the scrambled eggs, 2-3 tablespoons of cheese, and a sprinkle of scallions. Fold in opposite sides of each tortilla, then roll snugly from the bottom up. Place seam side down on the prepared baking sheet.
05 - Bake until heated through, about 12-15 minutes. Let stand 2-3 minutes before serving.

# Notes:

01 - For freezing: Allow all ingredients to cool to room temperature before assembling. After rolling burritos, do not bake. Instead, wrap each burrito in foil or plastic wrap, place on a baking sheet seam-side down, and flash freeze for about 1 hour. Then transfer to a labeled freezer-safe bag.
02 - To reheat from frozen: Either thaw overnight in refrigerator then bake at 400°F for 25 minutes (flipping halfway), or bake frozen at 400°F for 35-40 minutes, or microwave covered with a paper towel for 4-6 minutes (flipping halfway).
03 - If using aluminum foil, keep it on while baking but remove about 5 minutes before finishing. Remove all plastic wrap before heating.
04 - Let burritos stand for 2-3 minutes after reheating before eating.
05 - Freezer storage: These burritos maintain optimal quality for up to 1 month.
