In a medium bowl, whisk together minced garlic, olive oil, dried Italian herbs, paprika, salt, and black pepper until well combined.

Add chicken cubes to the bowl and toss until all pieces are evenly coated. Cover and refrigerate for at least 30 minutes to allow flavors to infuse.

Heat a large skillet over medium-high heat. Add chicken along with marinade. If needed, add chicken broth for added moisture during cooking. Cook, stirring occasionally, for 8–10 minutes or until chicken is golden and cooked through.
