Hobo Casserole Ground Beef (Print-Friendly Recipe)

# How to Make It:

01 - Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with cooking spray or butter.
02 - In a large skillet over medium heat, cook ground beef until browned, about 7 to 10 minutes, breaking up with a spatula. Add diced onion, green bell pepper, and minced garlic; sauté until vegetables soften and are fragrant, about 5 minutes.
03 - In a bowl, mix condensed cream of mushroom soup with sour cream until smooth. Season with salt and pepper to taste.
04 - Arrange half of the sliced potatoes evenly in the baking dish; season lightly with salt and pepper. Add the cooked beef and vegetable mixture evenly over potatoes. Pour cream sauce over the beef mixture, spreading evenly. Arrange remaining potato slices on top and season again with salt and pepper.
05 - Sprinkle shredded cheddar cheese evenly over the assembled layers. Bake in the preheated oven for 30 to 35 minutes, or until potatoes are tender and cheese is golden brown.
06 - Remove from oven and evenly scatter French fried onions on top. Return to oven and bake an additional 5 minutes until onions are crisped. Let rest several minutes before serving.
