Preheat oven to 350°F and line a rimmed baking sheet with parchment paper.

In a large mixing bowl, combine granulated sugar, light corn syrup, melted unsalted butter, vanilla extract, and large egg. Reserve 2 tablespoons of this filling for brushing later.

Stir chopped pecans into the remainder of the sugar mixture until evenly coated.

Unroll crescent dough and separate into individual triangles on the prepared baking sheet. Spoon 2 to 3 tablespoons pecan filling onto the wide end of each triangle. Roll each up tightly toward the narrow end.

Bake crescent rolls in the preheated oven for 8 minutes, or until the dough just begins to set.

Remove baking sheet from oven and brush each roll with the reserved sugar mixture. Return to oven and bake for an additional 5 minutes, or until golden brown.

Remove from oven and, if desired, sprinkle additional chopped pecans on top before serving.
