01 -
Set oven to 400°F and line a large baking sheet with parchment paper or grease lightly.
02 -
Pat chicken breasts dry with paper towels. Combine Italian seasoning, smoked paprika, salt, and black pepper in a small bowl. Brush the chicken with olive oil and coat thoroughly with seasoning mixture.
03 -
In a large mixing bowl, toss halved potatoes with olive oil, minced garlic, grated Parmesan, salt, and pepper until evenly coated.
04 -
Arrange seasoned chicken on one side of the prepared baking sheet. Spread potatoes in a single layer on the other side for even roasting.
05 -
Roast in the oven for 25 to 30 minutes, flipping potatoes halfway through. Ensure chicken reaches an internal temperature of 165°F using a meat thermometer.
06 -
During the last five minutes of baking, sprinkle additional Parmesan cheese over the chicken and potatoes. Broil briefly for a golden crust, if desired.
07 -
Remove from the oven, top with chopped fresh parsley, and serve hot.
